Hello, wonderful folks! This is Lainie Eilenberger, your reliable ally in West Texas real estate, and today, I'm trading my usual real estate gear for a kitchen apron. Although real estate and cooking may seem like entirely different ballgames, I assure you, they both demand a whole lot of heart, patience, and a deep understanding of local customs. That's why today, I'm excited to bring to you a cherished local treat: West Texas Crispy Steak Fingers paired with our silky-smooth Homestyle White Gravy.
While my heart sings when I'm dishing out wholesome meals for my loved ones, my ultimate joy is assisting clients as they traverse the exciting terrains of West Texas real estate. To aid in this journey, I manage three detailed real estate websites - www.lainieeilenberger.com, www.onefordroad-lubbock.com, and keyandslate.weselllubbock.com. Each one offers valuable information, from the hottest listings and crucial market data to resources for buyers and sellers, engaging blog posts, and much more.
But for today, let's dive into this delightful West Texas comfort food. Shall we get started?
Your Ingredient Checklist:
For the Steak Fingers:
1 1/2 lbs of tender cube steak, sliced into strips the width of a finger
2 cups of all-purpose flour for the perfect golden crust
Salt and pepper for seasoning
2 large eggs, freshly beaten
Enough vegetable oil for frying
For the Gravy:
1/4 cup of oil, set aside from frying
1/3 cup of all-purpose flour
2 cups of whole milk for a creamy texture
Salt and pepper to taste
Let's Get Cooking:
Season the steak strips with salt and pepper. Then, coat them in flour, dip them in the beaten eggs, and roll them in flour once again.
Heat the vegetable oil in a deep skillet over medium-high heat and fry the steak fingers until they turn a lovely golden brown. This should take about 3-4 minutes on each side.
Once done, set them aside on paper towels to rest. Keep them warm as you focus on the gravy.
Time to make the gravy! Use the same skillet, whisking the flour into the leftover oil over medium heat until it forms a smooth roux. Gradually whisk in the milk until fully incorporated. Continue to stir until the mixture thickens. Season with salt and pepper to taste.
Serve the crispy steak fingers with a generous drizzle of the warm, creamy gravy.
Voila! You now have a little piece of West Texas, right at your dining table.
